SVHS Science department chair, Darvin DeShazer was curious 26 years ago as a student at Humboldt State University. He wondered why the “Candy Cap” mushroom had no odor when fresh, but had the odor of maple syrup when cooked or dried. He asked his professor, William F. Wood, the question. that was the start of a 26 year quest to answer the question.

The scientific paper, “The maple syrup of the ‘candy cap” mushroom, Lactarius fragilis var. rubidus” was published in the journal: Biochemical Systematics and Ecology in March 2012. http://www.sciencedirect.com/science/article/pii/S0305197812000385
You’ll see that St. Vincent de Paul High School is noted.

Darvin Deshazer is quite renowned in the local mushroom community. Dr. Tom Bruns, Department of Plant and Microbial Biology, UC Berkeley has invited Mr. DeShazer, as a citizen scientist to a workshop on assembling a North American mycoflora for macropfungi this month at Yale.
